About Vendor

Huckins Farm, New Hamprton, NH, is home to a small herd of Guernsey and Jersey cows who enjoy pasture grasses in spring and summer and our own hay in winter. The large free stall barn and barnyard, give them a clean, safe, comfortable place to rest and exercise. In the parlor they are fed a minimum of non GMO feed. We know them all by name and treat each as individuals with specific needs and temperaments.
In continuous operation since 1784, our small family farm seeks to be sustainable and to give our customers the freshest milk, yogurt and cheeses, made in small batches in our farm kitchen. We welcome visitors to the farm to meet the cows and to purchase the freshest products possible in our farm store.

Shirley’s Macaroni & Cheese Hot Chocolate made with REAL MILK
ingredients: Ingredients:
2 C. spagetti, broken ½ cup cocoa
2 T. butter 1 cup sugar
2 T. flour 3 cups water
½ t. salt
1 ½ C. raw milk 2 qt. raw milk
15 oz. Grated cheddar cheese 1 t. real vanilla
½ C. cracker crumbs Combine cocoa, sugar and water. Stir until it reaches

Aunt Jeannette’s Corn Chowder Homemade Chocolate Pudding
ingredients: ingredients:
3 C. finely cut potatoes 1 C. sugar
¼ C. chopped onion ½ C. baking cocoa
3 – 4 cans cream-style corn ¼ C. cornstarch
1 t. salt 4 C. raw milk
½ – 1/3 C. butter 2 T. real butter

Randy’s Company Egg Casserole Margie’s Hot Fudge Sauce
ingredients: Step One
8 slices bread In a double boiler or very heavy bottomed pan, melt
2/3 lb. Shredded cheddar cheese 2 whole squares of Bakers Unsweetened chocolate
8 eggs, beaten ¼ C. butter
4 C. raw milk Step Two
1 t. salt ½ t. pepper Add and cook for a few minutes
½ t. dry mustard ¾ C. sugar
½ – ¾ lb. Bacon or ham ¼ C. unsweetened cocoa powder
Remove crusts, cube bread and place in buttered 9 x 13 Step Three
pan. Add cheese. Beat eggs, add milk, salt & pepper, and Add:
mustard. Pour liquid over bread and cheese. Refrigerate 1 C. heavy raw cream and bring to a boil.

Huckins Farm Spinach Artichoke Dip (serves 12)
1 qt. chopped fresh spinach ½ t. dried basil
1 can artichoke hearts ½ t. dried oregano
½ cup chopped onions ¼ t. salt
1 T. butter 1/8 t. garlic powder
8 oz. Roasted Garlic Yo Cheese 1/8 t. pepper
10 oz. S/P & Garlic Ricotta Cheese 2 T. grated Parmesan
¾ cup chopped tomato

Preheat oven 350F. In a saucepan, saute spinach and onions 5 minutes.
Combine cheeses, artichokes, tomatoes and seasonings until blended.
Stir in spinach mixture. Spread into 8” or 9” oven pan. Bake 20 minutes.
Serve hot with crusty bread.

Huckins Farm Mexican Layer Dip – healthy & delicious

2 (8 oz.) containers Yo Cheese Spreads
2 – 3 avocados
1 jar salsa
8 oz. shredded Cheddar, Monterey Jack, or your favorite cheese

Mash avocados and mix with a little garlic powder, and crushed coriander.
In large deep dish pie plate, spread Yo Cheeses (Original, Roasted Garlic . . .)
Spread avocado mixture over Yo Cheeses. Spread salsa next. Sprinkle shredded
Cheddar or your favorite cheese over all and serve with tortilla chips.

Huckins Farm Homemade Boursin Cheese
2 crushed garlic cloves ½ t. marjoram
8 oz. butter ½ t. basil
2 (8oz) Original Yo Cheese Spreads ½ t. chives
3 T. freshly grated Parmesan cheese ½ t. pepper
1 T. fresh dill or 1 t. dried dill ¼ t. dried thyme
2 T. minced fresh parsley

Bring cheeses and butter to room temperature and combine. Mix in garlic.
Add herbs and mix well. Pack into container and store in refrigerator.
Bring to room temperature and serve with crackers.
