Patty’s Guacamole has been making homemade guacamole in Farmer’s Markets for seven years. We make it right before your eyes and do it this way for two reasons: 1. The best guacamole is the freshest guacamole and 2. If you do not know what is in your guacamole don’t eat it. The way we make it answers both questions – you see it made so you know its’ fresh and you know what is in it.
We use the traditional Mexican recipe and do not take any shortcuts, using fresh Roma tomatoes, white onion, Jalepenos peppers, cilantro and lime juice and season with some cumin and Kosher salt.
The guacamole is mixed together in a bowl on a table at the booth and immediately put into sealed containers. The avocados are split open, the flesh scooped out and mixed together with the tomatoes, onion, cilantro and Jalepenos. (We take out most of the seeds and lining that make them hot.) Then the limes are cut and the juice is squeezed into the bowl.
In addition, at our kitchen we make Pico de Gallo salsa using tomatoes, onion, cilantro, fresh squeezed lime juice, garlic and Jalepenos.
Simple … fresh … delicious.
