Vegetable Ranch is a diversified certified organic farm growing more than 40 different vegetables on 125 acres in Warner, NH. Five high tunnels (green houses) allow us to produce greens like spinach, pac choi, and other items throughout the winter. Combined with our storage crops such as potatoes, carrots, beets, and onions, we are able to provide a variety of fresh, local, organic produce all year round.. In addition, Vegetable Ranch offers certified organic whole chickens and free range eggs.
Potato Kale Soup
4 tablespoons olive oil, 2 medium onions, chopped, 10 cloves garlic, chopped, 1/2 tablespoon red chilly flakes, 1 1/4 teaspoon salt, 6 medium Carola potatoes peeled and diced into cubes, 3 cups coarsely chopped kale, Pepper to taste.
Heat oil in soup pot; add onions, garlic, chilly flakes, and salt, Saute until onions are translucent. Add potatoes, Cover with water by 4 inches. Boil, cook covered until potatoes are 1/2 done. Add Kale and cook uncovered until potatoes re tender, 10-15 minutes. Puree in blender. Season with pepper to taste.
